Replacing kitchen floor predicament

I am currently replacing the flooring throughout my house with LVP and have run into an issue with the kitchen. The kitchen currently has the peel and stick floors, which go underneath the cabinets and appliances. I am wondering if I need to remove the cabinets in order to replace the floor or if there is any alternative. Also the kitchen has another layer of particle board under the flooring, putting it at a higher level than the living room. Should I just assume I will have to remove the entire raised surface or should I just put the LVP on that level and try to make a transition fit between the seam of the kitchen and living room? I feel that I’ve started a project that has now spiraled into a mess! via /r/DIY
