What kind of grease and oil to use on bare metal when restoring old metal tools?

I really enjoyed restoring old tools, such as using vinegar and light brushing to remove rust, and WD-40 to loosen up moving parts. Using metal enamel for non-moving parts during restoration. But what do I put on bare metal and what do I put inside moving parts precisely? Like exact models and types of oil or Grease and how to know which to use when?

I have some old wrenches that look stainless steel, old tools that seem to be high carbon steel that light rust after very light use that I have a hard time sealing, maybe even some cast iron stuff.
