Finish for a butcher block desk

Hey guys, so as the title says I'm building a butcher block desk and still haven't settled on a finish, I was mostly thinking lacquer because it dries fast and you don't have to sand between coats, but it seems that I can't find anyone else that has used this method, and I mostly see ones for an oil or waterbased polyurethane. Also, I really don't want to use mineral oil or oils and conditioners. What method for finishing would you recommend? All help is appreciated.
