Concrete for walls/vertical surfaces?

I'm trying to get started with concrete, and am having trouble understanding what I need for each job.

The main question I have is, do I need special concrete for working on vertical surfaces/walls? Or will the standard stuff work? If so, do I just mix it a little thicker/dryer or what?

On the other hand, if I do need some special concrete, what kind? And is there a way to avoid the fiberglass reinforced stuff? (I hate fiberglass)

I'm trying to figure this out for two basic jobs: filling in a big hole in the stucco outside my house, and coating cinderblocks to make them look like they are solid concrete.
