Advice: I am redoing the bathtub walls, should I replace the plumbing behind the walls?

Here is a picture of the existing plumbing.

No leaks that I know of in the plumbing, all water damage in the old wall was on the wall that has the new insulation to the left.

I'm not too handy but I think I could do PEX myself if it's recommend I change it out. Otherwise I'd have to call a plumber as I don't want to solder and risk burning my house down.

Also, how do I get that handle off hahaha!? I've looked for the set screw and can't find it.
