[help] mounting holes with toggle bolts

I use stuff like this: https://www.homedepot.com/p/Everbilt-1-4-in-x-3-in-Zinc-Plated-Toggle-Bolt-with-Round-Head-Phillips-Drive-Screw-10-Piece-803932/204273383

…to hang things on my old walls (lath and plaster). This normally works fine but there are some things that come with mounting holes with no plate like you might see with a French cleat system. But with these toggles, I can't think of how to leave the bolt jutting out of the wall so I can hang whatever I'm trying to hang. Anyone who's familiar with them knows what I'm talking about.

Any way to make this work? I've thought of using a nut, etc., but the issue is I think that wouldn't work with the mounting holes as they sort of slide onto the screw itself.
